Tomato, Mushroom, Cheese, YUM!
This past weekend I went to Palm Springs and had a magnificent time! My only regret was that I didn’t eat more food at this tapas bar that my husband and I went to. It was called Azul and it was fun, lively, hot (not their fault, we sat outside), but delicious as well! We had reservations at another restaurant so we only got 1 tapa here! I am eager to go back, because our one dish was excellent! Here is my lightened up version of this culinary delight!
2 thick slices of an heirloom tomato, 2 portobello mushrooms, 1/4 cup fat free cream cheese, 1/4 cup goat cheese, fresh chives
Grill portobellos and spread with mixture of cream cheese and goat cheese. Top with tomato slice and spread the top of that with remaining cheese mix. Top this stack with fresh chive and enjoy! Fresh, beautiful, healthy, and delicious-all in one dish!
